Summer Style Coleslaw
Summer means salads! Summer means Coleslaw!
There’s no other season of the year to come up with delicious, healthy salads than summer.
Salads are the perfect food for picnics and as side dish, but really, they are also a source for water-rich meals when you are looking for staying hydrated during hot summer days. All the reasons to try out this delicious
COLESLAW RECIPE
The base of this salad is made up of colorful cabbage.
Did you know that water makes up more than 90% of the vegetable?
Cabbage is also rich in glucosinolates, a compound found in cruciferous vegetables such as cauliflower, and broccoli.
Glucosinolates has been linked to supporting heart health and reducing the risk of cancer.
INGREDIENTS
- 2 cups shredded Slaw Veggie Mix (you can use different colors of cabbage)
- juice of 1/2 lime
- 1 tbsp Organic Coconut Nectar, (or honey)
- 1 tbsp Sesame Oil
- 2 tbsp Teriyaki Sauce
- 3 medium scallions
- 2 tbsp mint leaves
- 1 oz Raw Peanuts
DIRECTIONS
- In a large bowl using a whisker whisk together the lime juice, coconut nectar (or honey), oil, and teriyaki sauce
- Add the slaw veggie mix (or shredded cabbage), scallions and mint; toss to coat.
- Season to your taste, you can add more lime juice if like your slaw be more citrusy
- Sprinkle with the peanuts. Serve immediately.
I like to use Thai style peanut sauce as a dressing for this salad.
You might want to try it too.
It adds an exotic twist to this delicious salad.
Thai Peanut Sauce
Whisk together:
- 1 cup salted creamy peanut butter* (or almond butter or sunflower butter)
- 1 Tbsp coconut aminos (from Trader Joe’s)
- 1 Tbsp maple syrup (or honey)
- 1/4 tsp red pepper flake or less, adjust to preferred spice level (or use hot sauce)
- 2 Tbsp lime juice
- water to thin (add quantity as needed, depending on thickness of your choice)
Nutrition info (without the Thai Peanut Sauce):
- 120 calories per serving (cup)
- 7 g fat (without the peanut sauce)
- 12 g carbs
- 3 g protein
